You won't have rubbing issues until you go to 315's. 275's will fit nicely. If you are going to run 275's at the track make sure to take the tire pressure down to about 17psi. It'll give a bit more sidewall flex on the already-very-stiff side walls. Don't worry about driving on them. Just don't do anything crazy and drive at 100+mph speeds for a great length of time before inserting the proper tire pressure. As far as launching goes.. for an automatic with those tires it'd probably be best to leave at idle or a little above. You are going to have to play around a bit to find out where to get the best traction. It'll vary depending on track conditions.
